New publications from EnhanceMicroAlgae’s International Iberian Nanotechnology Laboratory Partners

EnhanceMicroAlgae partners at the International Iberian Nanotechnology Laboratory are studying the potential use of microalgae – rich in nutrients and bioactive compounds – as a functional 3D-printed ink for food applications.

They have formulated 3D-printed cookies with enhanced antioxidant activity and colour stability during their storage time by using functional food-inks fortified with the microalgae Arthrospira platensis.

The have also presented a set of tools and methodologies to evaluate the printability of edible biopolymer blends which provide represent a useful resource for the fabrication of inks tailored for food printing and other biomaterial applications.
